I won a Chili Cook-off the other day. Well..last week. I made a Hearty Pasilla Pepper and Stout Chili w/ 3 kinds of meat slow simmered in a Porcini Mushroom Broth. The Chili was well spiced and seasoned and cooked with chuck, short ribs, as well as a smoked turkey thigh, w/ kidney beans and navy beans that both kept their shape without turning to mush. It simmered for 6-8 hours with a limited edition Stout from DogFish Ales, and topped with crumbles of Cotija cheese, small diced red onions, chopped parsley and avocado. I had to rush straight to work so I didn’t find out till after that I had won. If I can remember the recipe (which I will figure out again one day) I will post the recipe. Until then here is a photo…
